Our company originated from our own kitchen.  For Christmas we would make pepper jelly as gifts. Everyone liked our jelly so much that we would receive calls from friends who had moved away requesting it for the holidays. We have also been very interested in organic gardening, and our original pepper jelly was from peppers grown in our own backyard. We have always loved Texas and Texas products.


After a very good friend read about olive trees in Texas, it gave us an idea. In 2001 we purchased 16 acres in the Texas Hill Country, north of Canyon Lake. By 2002,We had decided that 16 acres wasn’t enough land so we purchased an additional 14 acres. On these 30 acres we decided to plant olive trees and be the first in Comal County to try our hand at olive farming in the Texas Hill Country.


In the early part of 2003, with the realization that olive trees take longer than 3 years to produce, we decided to start our own company. We began a specialty food business catering to the organic market producing jams, jellies, chutney, fruit butters, and a drink mixer (that came about after ordering too many Texas calamondine oranges).


Being that we are olive growers, we wanted to carry olive oil products. Scott created our own line

of olive oil based cosmetics. These include WAF’s hand salve with Tea tree and Lavender oils, non-petroleum lip balm, and a non-DEET insect repellant.


Because of Akiko’s artistic and Japanese background, she decided to produce a line of pressed flower stationary, an art form called Oshibana in Japan. In the summer of 2003 Akiko had created 6 designs, printed and packaged.


2005 brought to us a new family member. At that time we put our energy homeward. In 2007 Akiko attended a lavender growing seminar in Blanco, Texas. The town of Blanco is close to our farm. In 2006 Blanco was appointed the Lavender Capital of Texas, and every summer the city of Blanco has a lavender festival. During that time the Lavender is in full bloom. Once our lavender grows, WAF will join Blanco in their lavender festival.


It has been a learning journey with more experiences come, but we are both eager and excited about our new future as Farmers and manufacturers. We have a motto and would like our lifestyle to be the lifestyle of the future. “A lifestyle worth living”.
