Debra Auden’s knowledge in bread making has come with many years of making artisan breads. She and her husband Bruce started Restaurant Biga and LocuStreet Bakery and then followed with Bakersfield Bakery in San Antonio in the 90's. At that time she was the soul (sole) bread maker of the restaurant. Her family is lucky to enjoy the hard work of her hands as she bakes them bread daily. These delicious breads go through a slow rise which gives them their hard crust and chewy, porous texture. Debra's breads have been featured in Texas Monthly, Southern Living, Food and Wine and many industry publications. Debra has formerly taught classes at the Blanco River Cooking School. This school was run by "Leslie McGrath".
In our class, Debra will share how to make her artisan style breads by demonstrating a basic loaf using a "biga" for a breadstarter. Using only four ingredients to make the perfect loaf, each participant will make their own loaf during class to bake and bring home. Discussions will include topics such as hand and machine kneading techniques, various types of starters and the importance of select types of flours and other ingredients.
